French butter cakes perfect for afternoon tea. Top with sugar or dip in chocolate for extra indulgence. Simple and irresistible.
Ingredients:
  • 2 large eggs
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon lemon zest
  • 1 cup confectioners' sugar
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.5 cup butter, melted and cooled
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then generously grease and flour 24 3-inch madeleine molds.
  • In a medium bowl, use an electric mixer on high speed to beat eggs, vanilla, and lemon zest for 5 minutes until light and fluffy. Gradually mix in the confectioners' sugar and continue beating for 5 to 7 minutes until the mixture is thick and satiny.
  • Sift the flour and baking powder together. Gradually fold in the flour mixture into the egg mixture, followed by the melted and cooled butter. Gently spoon the batter into the prepared molds, filling them 3/4 full.
  • Bake in the preheated oven until edges turn golden and tops spring back, about 10-12 minutes. Let cool in the molds on a rack for 1 minute, then gently loosen cookies with a knife. Invert cookies onto a rack to cool completely.
  • Sprinkle confectioners' sugar over the tops or dip the tips in melted semi-sweet chocolate. Store in an airtight container.
