Vanilla madeleines

Ingredients:
  • 2 (55g each) eggs
  • 70g caster sugar
  • 4.40 gm vanilla extract
  • 4.00 gm baking powder, sifted
  • 75 g butter, melted, plus extra for greasing
  • 30g white sugar
Instructions:
  • Preheat the oven to 220°C. In a medium bowl, whisk together eggs, caster sugar, vanilla, and salt until pale and fluffy using an electric mixer. Gently fold in the flour and baking powder with a spatula. Stir in the butter until combined. Let it sit for 10 minutes.
  • Prepare the madeleine tray by greasing with butter. Fill each mould with 1 tablespoon of batter. Bake in the oven until golden (5-10 minutes). Once baked, carefully remove from moulds while warm. Repeat until all madeleines are baked. Serve dusted with vanilla sugar.
