Homemade vanilla cake from scratch - a crowd-pleaser for any celebration!
Ingredients:
  • 1.5 cups white sugar
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup canola oil
  • 4 eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1.25 cups buttermilk
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Line two 9-inch cake pans with parchment paper on the bottoms and lightly grease the sides.
  • In a large bowl, use an electric mixer to cream together sugar, butter, and oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • In a separate bowl, mix together flour, baking powder, and salt. Gradually add this mixture and buttermilk to the butter mixture, gently stirring with a spatula after each addition until just combined. Ensure the batter is smooth and well-mixed, being careful not to overmix. Divide the batter evenly into the prepared pans.
  • Bake in the preheated oven for 30-35 minutes, or until the top springs back when touched and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
