Vanilla cake mix transformed into spooky Halloween cupcakes with frosting and icing.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix
  • 1 can (14 oz) coconut milk (not cream of coconut)
  • 3 eggs
  • 1 1/2 cups flaked coconut
  • 2 drops light blue liquid food color
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 1 tube (4.25 oz) Betty Crocker™ white decorating icing
  • 48 pieces candy corn
  • 1 box (6 oz) fruit-shaped hard candies
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Combine cake mix, coconut milk, and eggs in a large bowl. Mix on low speed for 30 seconds using an electric mixer, then increase to medium speed and beat for 2 minutes, scraping the bowl occasionally. Divide batter evenly among muffin cups.
  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then remove cupcakes from pans to cooling racks. Let them cool completely for about 20 minutes before serving.
  • In a resealable bag, combine coconut and food color. Shake well to tint. Frost cupcakes with white frosting and sprinkle them with the colored coconut. Finally, decorate the cupcakes like monsters by using icing to attach candy corn horns, banana candies for mouths, and fruit candies for eyes.
