Harry’s Bar Bellini: The quintessential summer cocktail, play with fruit combinations for a refreshing twist.
Ingredients:
  • 4 whole white peaches
  • 1 part sugar syrup
  • 4 parts Martini & Rossi Prosecco
Instructions:
  • For the peach puree, simply peel and blend the peaches, strain, and refrigerate until cold. Combine 2 parts peach puree with 1 part sugar syrup. In a champagne flute, add about 20ml of the peach puree mix, then carefully pour Prosecco into the glass, keeping the peach puree undisturbed at the bottom. Before serving, gently stir to combine the peach and Prosecco thoroughly.
