Ingredients:
  • 3 eggs
  • 107.50 gm caster sugar
  • 1 lemon, rind only, finely grated
  • 1 large lime, rind only, finely grated
  • 187.50 ml plain flour
  • 1.00 gm baking powder
  • 60g unsalted butter, melted and cooled
  • icing sugar, to dust
Instructions:
  • Preheat your oven to 200°C. Grease a 20-hole madeleine baking pan. In a bowl, whisk together eggs, sugar, lemon rind, and lime rind until thick, pale, and doubled in volume using an electric hand beater. Carefully fold in flour, baking powder, and butter using a metal spoon.
  • Spoon the mixture into the madeleine moulds. Bake until golden, about 15-20 minutes, or until the cakes spring back when touched in the center. Allow the madeleines to cool slightly in the moulds before transferring them to a wire rack. Dust with icing sugar and enjoy them with a side of coffee.
