Delicious lemon cookies with a sweet glaze, ideal for parties or gifts - a delightful combination of madeleines and lemon pound cake.
Ingredients:
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup light sour cream
  • 2 teaspoons grated lemon zest
  • 1.5 cups powdered sugar
  • 1.5 tablespoons fresh lemon juice
  • 1.5 tablespoons milk
Instructions:
  • Combine flour, baking powder, baking soda, and salt in a large bowl and whisk together until well mixed.
  • Using an electric mixer on medium speed, cream together sugar and butter until fluffy. Add eggs one at a time, ensuring each is fully incorporated. Reduce speed to low and blend in sour cream and lemon zest. Gently mix in the flour mixture until combined.
  • Chill dough until slightly firm, for approximately 1 hour in the fridge.
  • Preheat the oven to 375 degrees F (190 degrees C, placing racks in the upper-middle and lower-middle positions. Line 2 baking sheets with parchment paper.
  • Spoon dollops of dough onto the baking sheets, leaving a 2-inch gap between each cookie.
  • Bake the cookies until they are just golden around the edges, approximately 15 minutes, remember to switch and rotate the sheets halfway through baking. One sheet might take about 12 minutes, while the other might need 16 minutes. Allow the cookies to cool on the baking sheet for about 1 minute, then transfer them to a wire rack to cool for another 8 to 10 minutes.
  • After the cookies have cooled, blend powdered sugar, lemon juice, milk, and lemon zest to create a delightful glaze. Gently drizzle the glaze over the cookies once they are nearly at room temperature.
