Zesty lemon ricotta cookies - soft, tangy, and sure to impress even nonna.
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 1 cup ricotta cheese, at room temperature
  • 2 tablespoons lemon juice
  • 1 tablespoon almond extract
  • 0.5 teaspoon lemon zest
  • 1 large egg, room temperature
  • 0.5 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F (175°C) while lining a baking sheet with parchment paper.
  • In a large bowl, using an electric mixer, blend sugar and butter on low speed until combined. Increase speed to high and beat until fluffy, about 5 minutes. Mix in ricotta cheese, lemon juice, almond extract, lemon zest, and egg until well combined. Gradually add flour, baking powder, and salt on low speed until a dough forms.
  • Using a cookie scoop, place dough 2 inches apart on the prepared baking sheet.
  • Bake the cookies in the preheated oven until they turn a light golden color but remain slightly soft, for 12 to 15 minutes. Remove from the oven and let them cool completely on a wire rack for about 30 minutes before adding the icing.
  • Combine powdered sugar and freshly squeezed lemon juice in a small bowl until smooth to create a delicious icing. Drizzle the icing over the cookies and let them sit until the lemon glaze sets completely.
