Whip up luscious lemon ricotta soft cookies, ideal for coffee or tea.
Ingredients:
  • 0.66666668653488 cup whole-milk ricotta cheese
  • 0.66666668653488 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 lemon, zested
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • In a large bowl, use an electric mixer to blend together ricotta cheese, sugar, egg, vanilla, and lemon zest until smooth. Slowly add flour and baking powder, mixing until fully incorporated.
  • Using a small 1 1/2-tablespoon cookie scoop, scoop dough and shape into balls with floured hands. Roll each ball into a 7-inch rope on a lightly floured surface, then shape into a ribbon on a baking sheet. Repeat for the remaining dough, placing 9 cookies per sheet. Dust with powdered sugar before baking.
  • Bake in the preheated oven for 15 to 16 minutes until lightly browned. Then, cool the cookies completely on wire racks.
