Luscious ricotta cookies topped with zesty lemon frosting.
Ingredients:
  • 1 cup butter
  • 2 cups white sugar
  • 16 ounces ricotta cheese
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 cup milk
  • 0.5 teaspoon butter
  • 0.5 teaspoon shortening
  • 4 cups confectioners' sugar
  • 1 tablespoon lemon extract
  • 0.5 cup colored candy sprinkles
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease your cookie sheets.
  • Start by creaming together a generous 1 cup of butter and sugar in a large bowl. Beat in the eggs one at a time, then fold in the ricotta cheese and vanilla. Combine the flour, baking powder, and baking soda, and gently stir into the ricotta mixture. Use a spoon to drop dollops of the batter onto the cookie sheet.
  • Bake the cookies in the preheated oven for 8 to 10 minutes. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • In a small saucepan over medium heat, combine milk, 1/2 teaspoon of butter, and shortening. Stir occasionally until melted. Remove from heat and slowly mix in confectioners' sugar and lemon extract. Dip cookies in the icing and then into colored sugar or sprinkles.
