Italian ricotta cheese cookies topped with glaze and candied cherries or sprinkles. A delightful treat!
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, softened
  • 15 ounces ricotta cheese
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1.5 cups confectioners' sugar
  • 3 tablespoons milk
Instructions:
  • Assemble all your ingredients.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, use an electric mixer on low speed to blend sugar and butter until combined. Increase speed to high and beat until light and fluffy, approximately 5 minutes.
  • Mix in ricotta, eggs, and vanilla at medium speed until well combined.
  • Turn the mixer to low speed and mix in the flour, baking powder, and salt until a dough forms.
  • Scoop tablespoons of dough onto the baking sheets, leaving 2 inches of space between each.
  • Bake the cookies in the preheated oven until they are lightly golden and soft for about 15 minutes. Then, use a spatula to transfer the cookies to a wire rack to cool completely.
  • Prepare a delicious glaze by smoothly stirring confectioners' sugar and milk in a small bowl once the cookies have cooled.
  • Spread glaze on cookies using a small spoon or spatula, or dip each cookie into the glaze. Decorate to your liking.
