Elevate dessert with this decadent frozen chocolate cheesecake.
Ingredients:
  • 125g packet chocolate cookies, roughly broken
  • 75g unsalted butter, melted
  • 85g dark chocolate, chopped
  • 250g packet cream cheese
  • 250g ricotta
  • 150g caster sugar
  • 250ml thickened cream
Instructions:
  • Prepare the 18cm springform pan by greasing and lining it. Make the base by pulsing the cookies in a food processor until they turn into coarse breadcrumbs. Mix in the butter until well combined.
  • Press the crumb mixture firmly into the prepared pan using your hands until the surface is smooth. Chill covered for 20 minutes.
  • Set up a double boiler by placing the chocolate in a heatproof bowl over gently simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until the chocolate is melted and smooth. Take it off the heat and let it cool to room temperature.
  • In the bowl of an electric mixer, combine cream cheese, ricotta, and sugar. Beat for a couple of minutes until well combined. Add thickened cream and continue beating for 5 minutes until mixture is smooth and thick.
  • Spread the mixture over the biscuit base in the pan, ensuring a smooth surface. Drizzle with melted chocolate and gently swirl with a knife for a ripple effect. Freeze for 2 hours until solid.
  • Carefully release the cheesecake from the pan and enjoy fresh with cream or berries.
