Australian Summer Frozen Christmas Dessert.
Ingredients:
  • 312.50 ml red and green glace cherries
  • 250.00 ml raisins, chopped
  • 300g mixed glace fruit (such as pineapple, peach, apricots), chopped
  • 82.50 ml dark rum
  • 250g good-quality dark chocolate, chopped
  • 600ml thickened cream
  • 4 egg yolks
  • 70.95 gm caster sugar
  • 125.00 ml hazelnuts, roasted, chopped
Instructions:
  • Reserve 3 cherries for garnish. Cut the rest of the cherries in half and mix with raisins, glace fruit, and rum in a bowl. Stir well. Cover and let the fruit soak for 2 hours or overnight if possible.
  • Prepare your 8-cup capacity pudding bowl by lining it with plastic wrap. In a microwave-safe bowl, combine chocolate and 1 cup of cream. Microwave the mixture on HIGH for 2 to 3 minutes, stirring every minute with a metal spoon until the chocolate is melted and the mixture is smooth. Let it cool for 15 minutes.
  • In a large heatproof bowl, whisk together egg yolks and sugar until pale and thick using electric beaters for about 5 minutes. Add the cooled chocolate mixture and beat until well combined. Place the bowl over a saucepan of simmering water, ensuring the bowl does not touch the water. Continue to beat the chocolate mixture on low speed for about 5 minutes until it warms up and slightly thickens. Remove from heat and let it cool for about 20 minutes before using.
  • In a bowl, whip the remaining cream until soft peaks form. Gently fold the cream into the cooled chocolate mixture. Add the fruit mixture and hazelnuts, then spoon the mixture into a pudding bowl. Cover with foil and freeze overnight.
  • Invert pudding onto a plate, discard plastic, top with reserved cherries, slice with a sharp knife, and serve.
