Frozen chocolate mousse

Ingredients:
  • 300g good-quality dark chocolate, coarsely chopped
  • 250mls (1 cup) thickened cream
  • 6 eggs, separated
  • 20.00 gm caster sugar
  • 100g (2/3 cup) hazelnuts, to serve
Instructions:
  • In a heatproof bowl, combine the chocolate and 125mls (1/2 cup) of cream. Melt the chocolate over simmering water, stirring until smooth. Let it cool for about 30 minutes until almost at room temperature.
  • In a large mixing bowl, use electric beaters to whisk together the egg yolks and caster sugar until they are pale and creamy. Stir in the chocolate until well combined. In a separate medium bowl, use clean electric beaters or a whisk to whip the remaining 125mls (1/2 cup) of cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture using a large metal spoon until just combined.
  • In a clean medium bowl, whisk the egg whites with clean electric beaters until soft peaks form. Gently fold the whipped egg whites into the chocolate mixture until combined. Transfer the mixture into an airtight container and freeze for 4 hours or until firm.
  • Preheat your oven to 180°C for optimal cooking temperature.
  • Spread the hazelnuts on a baking tray and roast in the preheated oven for about 10 minutes, or until fragrant (refer to microwave tip 1 in the previous recipe). Once cooled, chop coarsely.
  • Scoop the chilled chocolate mousse into bowls, sprinkle with toasted hazelnuts, and serve promptly for a delightful treat.
