Frozen chocolate mousse

Indulge in a frozen version of a classic chocolate treat.
Ingredients:
  • 60g good-quality dark cooking chocolate (see note), broken into pieces
  • 60g unsalted butter, chopped
  • 2 tsp orange liqueur
  • 2 eggs, separated
  • pinch of salt
  • 20.00 gm caster sugar
  • cocoa powder, to serve
Instructions:
  • Grease two 3/4-cup ramekins or molds lightly. Line the base and sides with plastic wrap, leaving plenty of overhang.
  • Combine chocolate and butter in a microwave-safe bowl. Microwave on MEDIUM (50%) for 2 to 3 minutes, stirring every minute with a metal spoon until smooth. Let it cool for 5 minutes before using.
  • Combine the liqueur and egg yolks with the chocolate mixture, stirring until fully incorporated.
  • In a small bowl, use an electric mixer to beat egg whites and salt until soft peaks form. Add sugar and beat until well combined. Fold one third of egg whites into the chocolate mixture, then gently fold in the remaining egg whites. Spoon the mixture into the ramekins and cover with excess plastic wrap. Freeze for at least 3 hours or overnight until firm.
  • Gently remove the mousse from the ramekins using plastic wrap. Place them onto chilled serving plates, dust with cocoa, and serve.
