Homemade ricotta cheese: creamy and versatile for any Italian dish!
Ingredients:
  • 0.25 cup water
  • 1 teaspoon citric acid powder
  • 1 gallon raw milk
  • 2 tablespoons heavy whipping cream
  • 2 teaspoons salt
Instructions:
  • Mix water and citric acid in a small bowl until fully dissolved.
  • In a large pot over medium heat, gently heat milk until it reaches 185 degrees F (85 degrees C) on an instant-read thermometer, stirring occasionally to avoid scorching. Add citric acid and continue stirring until curds form. Avoid boiling.
  • Transfer the curds into a cheesecloth-lined sieve using a slotted spoon. Secure the cheesecloth around the curds and let them drain over a bowl at room temperature for 20 to 30 minutes.
  • Unwrap the cheese from the cheesecloth and mix in the cream and salt. Stir thoroughly to combine. Enjoy immediately as is or incorporate into your preferred dish.
