Decadent Italian ricotta cheese cookies, frosted with sweet icing for a moist and delicious treat.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 ounces ricotta cheese
  • 0.5 teaspoon baking soda
  • 2 tablespoons butter, softened
  • 2 cups confectioners' sugar
  • 0.25 teaspoon vanilla extract
  • 1.5 tablespoons milk
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease the cookie sheets.
  • In a medium bowl, mix 1/2 cup butter and white sugar until creamy. Add eggs one at a time, then mix in vanilla and ricotta cheese. In a separate bowl, combine flour, baking soda, and salt; slowly add to the cheese mixture. Spoon rounded teaspoonfuls 2 inches apart on cookie sheets.
  • Bake in the preheated oven for 8 to 10 minutes until edges turn golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Combine the remaining butter and confectioners' sugar in a medium bowl and cream together. Gradually beat in the vanilla and milk until you achieve a spreadable consistency. Frost the cooled cookies.
