Italian anise pizzelle: Thin, flavorful cookie cooked on a pizzelle iron.
Ingredients:
  • 6 eggs
  • 1.5 cups white sugar
  • 1 cup margarine, melted and cooled
  • 2 tablespoons anise extract
  • 3.5 cups all-purpose flour
  • 4 teaspoons baking powder
Instructions:
  • Use an electric mixer to beat the eggs and sugar until fluffy. Add melted margarine and anise extract. Gradually stir in the flour and baking powder until the dough is sticky.
  • Preheat your pizzelle iron following the manufacturer's guidelines. Spoon batter onto the iron, cook for approximately 90 seconds until steam dissipates. Remove carefully, cool, and store in an airtight tin at room temperature.
