Delicious Italian ricotta cookies with almond glaze and festive sprinkles, perfect for holidays.
Ingredients:
  • 15 ounces ricotta cheese
  • 1.75 cups white sugar
  • 0.5 pound butter
  • 2 eggs
  • 2 tablespoons vanilla extract
  • 4 cups all-purpose flour, or more as needed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1.5 cups confectioners' sugar
  • 5 tablespoons milk
  • 1 teaspoon almond extract
  • 0.25 cup colored candy sprinkles
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare cookie sheets by greasing or lining them.
  • In a large bowl, mix ricotta, sugar, butter, eggs, and vanilla extract using an electric mixer until smooth. Add flour, baking powder, and baking soda into the mixture; incorporate more flour if necessary to create a workable dough. Shape the dough into walnut-sized balls and arrange them 2 inches apart on cookie sheets.
  • Bake until edges are golden, about 8 to 10 minutes in a preheated oven.
  • Prepare the glaze by combining confectioners' sugar, milk, and almond extract until velvety. Drizzle over freshly baked cookies and garnish with colorful candy sprinkles.
