Tangy lemon cookies with citrus glaze made quick and easy with cake mix!
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 2 tablespoons finely grated lemon peel
  • 2 tablespoons lemon juice
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • 1 3/4 cups powdered sugar
  • 3 to 4 tablespoons lemon juice
Instructions:
  • Preheat the oven to 350°F.
  • In a large bowl, use an electric mixer to blend softened cream cheese, butter, and lemon peel until smooth. Add egg and 2 tablespoons of lemon juice, mix until smooth. Gradually add cake mix on low speed until well combined. Drop rounded tablespoonfuls of dough onto ungreased cookie sheets, keeping them 2 inches apart.
  • Bake for 12 to 14 minutes until edges turn lightly golden. Let the cookies cool on the sheet for 2 minutes, then transfer to a cooling rack. Allow to cool completely for about 20 minutes.
  • In a small bowl, mix the Glaze ingredients until smooth and easily spreadable. If the mixture is too thick, add more lemon juice, 1/2 teaspoon at a time. Dip the top of each cookie in the glaze, allowing any extra to drip off. Place the cookies upright on a cooling rack over a cookie sheet or waxed paper. Let them sit for about 30 minutes until the glaze sets. Store the cookies in an airtight container at room temperature.
