Delicious soft-baked lemon cookies with a sweet glaze, ideal for summer gatherings and bake sales.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 cups white sugar
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 0.75 cup vegetable oil
  • 0.5 cup lemon juice
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 0.33333334326744 cup lemon juice
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, blend together flour, sugar, baking soda, and salt. Create a well in the center using a spoon. Pour in oil, lemon juice, and vanilla extract. Combine ingredients until a dough forms.
  • Shape the dough into balls and gently press them down using the heel of your hand or a flat utensil. Place the cookies 2 inches apart on ungreased baking sheets.
  • Bake in the oven until edges are golden: 8 minutes for a softer cookie, 10-12 minutes for a crispier cookie. Let cool on the baking sheet for 1 minute, then transfer to a wire rack to cool for an additional 8-10 minutes.
  • Combine powdered sugar and lemon juice until smooth and drizzle over cooled cookies to your liking.
