Homemade lemon cookies bursting with zesty citrus flavor for a soft, nostalgic delight.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 2 tablespoons fresh lemon zest
  • 2 large eggs
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.25 cup confectioners' sugar for rolling
Instructions:
  • Assemble all the ingredients.
  • In a large bowl, use an electric mixer to beat sugar, butter, and lemon zest until light and fluffy, for about 3 minutes.
  • Combine eggs, lemon juice, and vanilla in a small bowl, whisk until fully blended. Gradually beat into butter mixture on low speed.
  • Combine flour, baking powder, and salt in a medium bowl. Gradually add to egg mixture on low speed until just combined. Be careful not to overmix; the dough will be sticky. Cover the dough and chill in the refrigerator for 30 minutes; it will remain sticky after chilling.
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper. Shape the dough into balls using a cookie scoop or tablespoon, coat them with confectioners' sugar, and place them 2 inches apart on the baking sheets. Gently press each ball down with your hand before baking.
  • Place in the oven already preheated until the centers are just barely set, around 11 to 12 minutes. Cool completely on a wire rack before transferring to an airtight container for storage.
