Royal lemon cookies fit for royalty.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 1.5 cups white sugar
  • 2 eggs
  • 0.25 cup lemon juice
  • 1 lemon, zested
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the flour, baking soda, and salt in a bowl and whisk until well mixed. In a separate mixing bowl, use an electric mixer to cream together the butter and sugar until creamy, about 5 minutes. Add eggs one at a time, making sure each is fully incorporated before adding the next. Mix in lemon juice, lemon zest, and vanilla extract. Gradually add the flour mixture and mix gently until just combined. Chill the dough for about 30 minutes.
  • Measure out approximately 1 1/2 teaspoons of dough for each cookie, shape into balls, and place them on baking sheets with 2 inches of space between each ball.
  • Bake the cookies in the preheated oven until set and starting to brown at the edges, around 8 minutes. Allow them to cool on the baking sheets for 1 minute before transferring to racks to finish cooling.
