Create a stunning princess palace cake using store-bought sponge cake, cookies, and candies for the perfect party centerpiece.
Ingredients:
  • 450g double unfilled sponge cake slabs (see notes)
  • 165.00 gm raspberry jam
  • 2 x 450g tubs strawberry frosting
  • 460g round double unfilled sponge cake (see notes)
  • 1/2 x 453g tub vanilla frosting
  • 12 musk sticks
  • 33 bright pink chocolate buttons
  • 6 yellow M&M’s
  • 15 Iced VoVo biscuits
  • 12 hundreds and thousands biscuits
  • 38 mini hundreds and thousands biscuits
  • 32 purple candy chews
  • 12 pink and yellow heart-shaped lollipops
  • 1000.00 ml assorted small pale pink lollies (see notes)
  • 5 single scoop waffle ice-cream cones
Instructions:
  • Slice each sponge slab in half horizontally. Arrange the sponge bases next to each other on a cake board or serving plate to create a 20cm x 28cm rectangle. Cover the top with 1/3 cup of jam. Place the sponge slab tops on top. Save 2 tablespoons of strawberry frosting. Using a warm palette knife, evenly spread the top and sides of the cake with 75% of the remaining strawberry frosting (refer to notes).
  • Cut a round sponge in half horizontally to create two layers. Place the bottom sponge on a piece of baking paper. Spread the top of the bottom sponge with the remaining jam and sandwich it with the top sponge. Use a warm palette knife to cover the cake with vanilla frosting. Gently lift the cake from the paper and place it in the center of the rectangular cake.
  • Cut the remaining round sponge into a 12cm round, then place it on a piece of baking paper. Spread it with the remaining strawberry frosting using a warm palette knife. Lift the cake from the paper and place it on top of the large round sponge.
  • Cut 1 musk stick into a 7cm piece and trim one end to form a point. Cut 2 musk sticks into 6.5cm pieces and another 2 into 6cm pieces, trimming one end of each to a point. Arrange them to form a door on the bottom cake as shown in the picture. Attach a bright pink chocolate button as a handle using reserved frosting.
  • Cut the remaining musk sticks into pieces that are 14 x 5.5cm in size. Place 3 yellow M&M’s on each side of the door, following the picture as a guide. Next, place 1 Iced VoVo next to the M&M’s, then add 1 piece of musk stick. Surround the cake with the remaining Iced VoVos and musk stick pieces, alternating them along the sides and back, using the picture as a reference.
  • Decorate the middle cake with rectangular hundreds and thousands biscuits, then top the cake with 4 mini hundreds and thousands biscuits. Lastly, alternate pressing bright pink chocolate buttons and purple candy chews around the side of the top cake, following the picture as a guide.
  • Press lollipops of alternating colors into the top edge of the top cake. Stack 10 mini hundreds and thousands biscuits together with a little frosting in between each biscuit, placing the stack in the center of the top cake and pressing to secure. Stack 6 mini hundreds and thousands biscuits together with a little frosting, then repeat to make 3 more stacks. Place the stacks in the corners of the rectangular cake according to the picture, pressing to secure.
  • - Place assorted pale pink lollies on top of each cake. - Insert a small flag into the end of each ice-cream cone. - Attach one cone upside-down onto each biscuit stack using frosting. - Serve.
