Soft and sweet sour cream cookies with fresh lemon zest.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 teaspoon baking soda
  • 6 tablespoons unsalted butter, softened
  • 0.5 cup white sugar
  • 0.5 cup sour cream
  • 2 teaspoons grated lemon zest
  • 0.5 teaspoon lemon extract
Instructions:
  • Heat the oven to a toasty 350 degrees F (175 degrees C) and grease 2 cookie sheets.
  • Mix together the flour, baking soda, and salt in a small bowl.
  • In a large bowl, use an electric mixer on medium speed to cream butter until smooth. Slowly add sugar and beat until the mixture is light and fluffy. Incorporate sour cream, lemon zest, vanilla extract, and lemon extract until well combined. Switch the mixer to low speed and blend in the dry ingredients until just mixed.
  • Spoon dollops of dough onto the lined baking sheets, leaving a 1-inch space between each.
  • After baking in the preheated oven until cookies are set and edges are golden for 10 to 12 minutes, let them cool for 1 minute. Then, gracefully transfer the cookies to wire racks using a wide metal spatula to cool completely.
