Tangy lemon puddings bursting with flavor - a zesty delight for lemon enthusiasts.
Ingredients:
  • 4 eggs
  • 141.90 gm caster sugar
  • 125ml lemon juice
  • 20.00 ml lemon zest, finely chopped
  • 125ml cream
Instructions:
  • Preheat your oven to a toasty 160°C and generously grease 4 ramekins, each 125ml in capacity.
  • Set up a water bath according to the note.
  • Beat eggs and sugar until thick, then fold in the juice and zest before gently incorporating the cream. Divide the mixture into 4 x 125ml ramekins and bake in a water bath for 20-25 minutes or until just set. Chill the puddings before serving.
  • Sprinkle the puddings with icing sugar and serve them at room temperature.
