Luscious Orange Cheesecake with Raspberries

Elevate cheesecake with zesty orange peel, liqueur, and fresh raspberries.
Ingredients:
  • 1 1/2 cups crushed vanilla wafer cookies (about 50 cookies)
  • 1/4 cup butter or margarine, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon grated orange peel
  • 1 pint (2 cups) whipping (heavy) cream
  • 3 egg yolks
  • 2/3 cup sugar
  • 2 tablespoons orange-flavored liqueur or orange juice
  • 2 cups fresh raspberries
Instructions:
  • Preheat the oven to 300°F. Combine cookie crumbs and butter in a 9-inch springform pan, ensuring the crumbs are thoroughly coated. Press the mixture firmly onto the bottom and 1 inch up the side of the pan.
  • In a large bowl, use an electric mixer to beat cream cheese until smooth. Mix in milk, eggs, vanilla, and 1 teaspoon of orange peel, scraping the bowl twice, until well blended. Pour over crust.
  • Bake for 1 to 1 1/4 hours until the edges are lightly golden and the center is slightly jiggly. Let it cool on a wire rack for 30 minutes, then refrigerate for 4 hours until chilled.
  • 1. In a 3-quart saucepan, gently warm the whipping cream until it almost reaches a boil over low heat. In a small bowl, combine egg yolks, sugar, and 1 teaspoon of orange peel, and mix until smooth and well combined. Gradually stir a small amount of the hot cream into the yolk mixture, then pour the yolk mixture back into the saucepan with the cream. Cook the mixture over low heat for 10 to 15 minutes, stirring constantly, until it thickens enough to coat the back of a spoon. Be careful not to let it boil. Remove from the heat and allow it to cool for 30 minutes until it reaches room temperature. Once it has cooled, mix in the liqueur and refrigerate until ready to serve.
  • When ready to serve, generously spoon 2 tablespoons of the delicious sauce onto each individual plate. Gently place a flavorful slice of cheesecake on top of the sauce and adorn with fresh raspberries.
