Luscious Orange-Cranberry Sweet Rolls

Orange cranberry cardamom pull-apart rolls: a sweet and flavorful yeasted dough baked to perfection, ready to be pulled apart and enjoyed.
Ingredients:
  • 1 cup milk, warmed
  • 1 tablespoon instant yeast
  • 1 tablespoon white sugar
  • 0.5 cup freshly squeezed orange juice
  • 3 tablespoons unsalted butter, softened to room temperature
  • 1 teaspoon freshly grated orange zest
  • 3.25 cups all-purpose flour
  • 0.33333334326744 cup dried cranberries
  • 2 tablespoons grated orange zest, or more to taste
  • 1 teaspoon ground cardamom
  • 0.25 cup unsalted butter, softened to room temperature
  • 0.5 (8 ounce) package cream cheese, softened to room temperature
  • 0.5 cup unsalted butter, softened to room temperature
  • 1 cup powdered sugar
  • 2 tablespoons orange juice
Instructions:
  • In the bowl of a stand mixer fitted with a dough hook, combine warm milk, yeast, and 1 tablespoon sugar. Allow it to sit until foamy, approximately 5 minutes. Add orange juice, egg, butter, and orange zest to the bowl, then mix on low speed for 1 minute.
  • Combine 3 cups of flour and salt in a mixing bowl. Begin mixing on low speed for 1 minute, then increase to medium for 2 minutes. Incorporate dried cranberries. If the dough is sticky, mix in the remaining 1/4 cup of flour as needed.
  • Place the dough in a greased bowl, cover it, and let it rise for 1 1/2 hours.
  • As the dough rises, let's make the filling. In a medium bowl, combine sugar, orange zest, and cardamom, mixing it with your fingers. Blend in softened butter until fully incorporated. Set aside.
  • Transfer the dough onto a floured surface, sprinkle more flour on top, and roll it out into a large rectangle. Evenly spread the filling over the dough. Roll it tightly from one long side. Use a serrated knife to cut the log in half, then each half into quarters. Finally, cut each quarter into 3 pieces to make a total of 12 rolls.
  • Transfer the rolls into a pan coated with a hint of oil. Cover them and allow them to rise for 45 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and place the roll pan on a foil-lined baking sheet to catch any spillage.
  • Bake until golden brown, approximately 25 minutes in the preheated oven.
  • Prepare the orange icing by blending cream cheese and butter until smooth in a medium bowl using an electric mixer. Add powdered sugar and mix for 1 minute, then incorporate orange juice and zest. Blend until the icing is smooth and easy to spread. Chill in the refrigerator until the rolls are prepared.
  • Immediately cover the freshly baked rolls with icing after removing them from the oven.
