Lychee and coriander snapper

Quick and easy Asian-inspired summer dish that is irresistible.
Ingredients:
  • 8 lychees, peeled, deseeded and roughly chopped
  • 60.00 ml roughly chopped coriander
  • 2.40 gm salt
  • 1 tsp ground pepper
  • 1 tsp chopped small red chilli, finely chopped with seeds removed
  • 1 lime, juiced
  • 1/2 Spanish onion, chopped
  • 4 snapper fillets or other white fish
Instructions:
  • Combine lychees, olive oil, coriander, salt, pepper, onion, chili, and lime juice in a large bowl. Toss to combine and let sit.
  • Heat a pan with canola spray or olive oil. Cook the fish for 3-4 minutes, turning once, until fully cooked. Plate the cooked fish and generously spoon over the delicious lychee mixture. Serve and enjoy!
