Refreshing mandarin and lychee fruit salad with a zesty kick from mint and ginger.
Ingredients:
  • 10 mandarins
  • 2 x 565g cans lychees, drained, syrup reserved from 1 can
  • 4cm piece fresh ginger, peeled, thinly sliced
  • 125.00 ml fresh mint leaves
Instructions:
  • Peel and separate 6 mandarins into segments, then place in a large bowl with the drained lychees. Juice the rest of the mandarins.
  • In a saucepan, combine the reserved lychee juice, mandarin juice, ginger, and half of the mint leaves. Bring to a boil over high heat, then reduce to medium-high and simmer uncovered for 5 minutes until slightly reduced.
  • Take off the heat and let it sit for 5 minutes.
  • Strain the liquid over the fruit using a sieve, then finely chop the remaining mint leaves. Gently mix the mint with the fruit, then distribute the mixture into serving bowls and enjoy right away.
