Succulent summer fruit salad, refreshing and sweet.
Ingredients:
  • 4 (about 450g) mandarins
  • 1 565g can lychees in syrup, drained, syrup reserved
  • 62.50 ml loosely packed fresh mint leaves, chopped
  • Thick natural yoghurt, to serve
Instructions:
  • Peel the mandarins, separate the segments, remove any white strands, and combine with lychees in a bowl.
  • In a small saucepan, bring the reserved lychee syrup to a boil over medium-high heat. Simmer uncovered on low heat for 15 minutes until the syrup reduces to about 80ml (1/3 cup). Drizzle over the mandarin segments and lychees.
  • Combine the mint with the fruit, gently toss, and let sit for 30 minutes to macerate. Serve with the yoghurt.
