Lychees & melon with lemon grass syrup

Finish your Chinese meal with a refreshing tropical fruit salad, bursting with sweet and fragrant flavors.
Ingredients:
  • 250ml (1 cup) water
  • 110g (1/2 cup) white sugar
  • 2 lemon grass stems, pale section only, halved lengthways, bruised
  • 18 lychees, peeled
  • 1/4 ripe rockmelon, deseeded, peeled, coarsely chopped
  • 1/4 ripe honeydew melon, deseeded, peeled, coarsely chopped
  • Good-quality vanilla ice-cream, to serve
Instructions:
  • In a small saucepan over medium heat, combine water and sugar. Stir and cook for 3-5 minutes until sugar dissolves. Add lemongrass, bring to a boil, and simmer for 5 minutes until syrup slightly thickens. Let cool for 1 hour.
  • Combine the lychees, rockmelon, and honeydew melon in a bowl.
  • Once the lemon grass has infused the syrup, remove and discard it. Divide the fragrant lychee mixture into serving bowls and generously pour over the aromatic syrup. Serve promptly with a scoop of creamy ice cream.
