Lychees in ginger syrup

Juicy and sweet Chinese fruit with pink-red skin, ideal for summer desserts and cocktails.
Ingredients:
  • 500ml (2 cups) water
  • 215g (1 cup) caster sugar
  • 2cm-piece fresh ginger, peeled, cut into thin matchsticks
  • 500g lychees, peeled
  • Vanilla ice-cream, to serve
Instructions:
  • Combine water and sugar in a small saucepan over medium heat, stirring until the sugar dissolves. Stir in the ginger and bring to a boil. Simmer for 10 minutes or until the syrup thickens slightly. Allow it to cool for 10 minutes before using.
  • In a bowl, place the lychees and pour the syrup over them. Cover with plastic wrap and chill in the fridge for 2 hours or until cold. Serve with vanilla ice cream.
