Ingredients:
  • 170g (3/4 cup) caster sugar
  • 310ml (1 1/4 cups) water
  • 5cm piece fresh ginger, peeled, thinly sliced
  • 3 sprigs fresh mint
  • 500g fresh lychees, peeled
  • 40.00 ml shredded fresh mint, extra
Instructions:
  • In a medium saucepan, combine sugar and water. Stir over gentle heat until the sugar completely dissolves. Introduce ginger and mint sprigs, then turn up the heat and bring to a vigorous boil. Lower the heat to a gentle simmer, leaving uncovered for 5 minutes.
  • Add the lychees and simmer without a lid for 4-5 minutes until tender. Remove and discard the mint sprigs. Let it cool for 5 minutes or longer to enhance the flavors. Stir in the shredded mint and serve.
