Delicious almond and citrus filled filo pastry, a sweet and spicy treat known as "mhensha".
Ingredients:
  • 130g (1 cup) slivered almonds
  • 55g (1/2 cup) almond meal
  • 100g (1/2 cup) caster sugar
  • 80g (1/2 cup) pure icing sugar
  • 2 egg whites
  • 20.00 ml finely grated orange rind
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground cloves
  • 6 sheets filo pastry
  • 60g butter, melted
  • Ground cinnamon, to dust
  • Caster sugar, to dust
  • Double cream (optional), to serve
  • Honey (optional), to serve
Instructions:
  • Combine slivered almonds, almond meal, caster sugar, icing sugar, egg whites, orange rind, cinnamon, and cloves in a food processor. Pulse until finely chopped, then transfer the mixture to a bowl.
  • Preheat the oven to 180°C and prepare a round 18cm cake pan by greasing and lining it with non-stick baking paper.
  • Take one filo sheet and generously brush it with melted butter. Place another filo sheet on top and brush with more butter. Repeat this process with another filo sheet. Carefully fold the filo stack in half lengthwise. Spread a quarter of the almond mixture in a 1cm-wide log along one edge of the filo stack. Roll it up tightly to form a log. Place the rolled filo log in the center of the prepared pan, seam side down, in a spiral shape. Repeat this process with the remaining almond mixture and filo stack to create a second log, positioning it next to the first one and wrapping them together. Continue to create additional logs with the remaining filo, butter, and almond mixture, filling the pan completely in a coil shape. Brush any remaining butter on top. Bake in the oven for 35-40 minutes until the pastry is beautifully golden. After baking, sprinkle with a mixture of cinnamon and sugar. Serve warm with a dollop of cream and a drizzle of honey.
