Mac 'n' cheese parmi tray bake

Irresistible fusion of macaroni cheese and chicken parmigiana.
Ingredients:
  • 2 (about 600g) chicken breast fillets
  • 150g (1 cup) plain flour
  • 1 tsp dried oregano
  • 140g (2 cups) fresh breadcrumbs, made from day-old bread
  • Vegetable oil, to shallow-fry
  • 185ml (3/4 cup) napoletana pasta sauce
  • 55g (1/2 cup) grated perfect pizza cheese
  • Fresh basil leaves, to serve
  • 200g dried macaroni pasta
  • 40g butter
  • 40.00 ml plain flour
  • 375ml (1 1/2 cups) milk
  • 150g (1 1/2 cups) perfect pizza cheese
Instructions:
  • Lay the chicken flat on a cutting board. Place your palm on top of the breast and slice carefully in half horizontally using a long, sharp knife. Repeat with the remaining chicken breast to create 4 fillets.
  • Sandwich the chicken between sheets of plastic wrap and delicately flatten it to a 1cm thickness using a meat tenderizer or rolling pin.
  • Mix the flour and oregano on a plate and season. Beat the eggs in a shallow bowl. Spread the breadcrumbs on a separate plate. Coat the chicken in the seasoned flour, then dip in the beaten egg, and press into the breadcrumbs. Place the crumbed chicken on a large plate, cover loosely with plastic wrap, and refrigerate until needed.
  • While the macaroni is being prepared, cook it in a large saucepan of boiling water for 8-10 minutes until almost al dente. Drain thoroughly and keep aside.
  • In a saucepan, melt butter over medium-high heat until foamy. Stir in the flour and cook for 1 minute until bubbly. Slowly whisk in the milk and cook for 2 minutes until the sauce thickens. Take the pan off the heat and stir in the cheese until melted. Mix in the macaroni until well coated in the cheese sauce.
  • Preheat the oven and lightly grease a 3L baking dish. Transfer the macaroni mixture and set aside.
  • - Fill a large frying pan with oil until it reaches about 1cm up the side. Heat over medium-high heat. - Add two pieces of chicken and cook for 2-3 minutes on each side until golden. - Place the cooked chicken over the macaroni. - Repeat with the rest of the chicken pieces. - Spread the pasta sauce over the chicken. - Sprinkle with cheese and bake for 20-25 minutes until melted and golden. - Finish by garnishing with fresh basil.
