Mac 'n' cheese spring rolls recipe

Upgrade your party with indulgent mac 'n' cheese spring rolls, deep-fried to golden perfection. Your guests will thank you later!
Ingredients:
  • 437.50 ml dried macaroni
  • 40.00 ml plain flour
  • 257.50 gm milk
  • 82.50 ml grated tasty cheese
  • 250g packet (20 sheets) frozen spring roll wrappers, just thawed
  • Vegetable oil, for shallow-frying
  • 130.00 gm tomato sauce
  • 40.00 ml finely chopped fresh coriander leaves
  • 1/2 tsp finely grated lime rind
  • 10.60 gm lime juice
  • 1/2 tsp dried chilli flakes
Instructions:
  • Prepare the pasta by cooking it in a generous amount of boiling salty water according to the package instructions. Drain thoroughly.
  • In a medium saucepan over medium-high heat, melt butter until smooth. Add flour and stir until golden and bubbly, about 1 to 2 minutes. Slowly whisk in milk until thickened, about 1 to 2 minutes. Remove from heat and stir in cheese until smooth. Toss pasta in the sauce in a large bowl, season with salt and pepper, and mix well. Chill in the refrigerator for 30 minutes until cool. Enjoy!
  • Prepare the Spicy Tomato Dipping Sauce by mixing all ingredients in a bowl.
  • Lay down 1 spring roll wrapper with a corner facing towards you, and cover the rest with a damp tea towel. Put 1/4 cup of pasta mixture in a 10cm log shape along the bottom corner. Fold the corner over the filling, tuck in the sides, and roll up tightly to seal. Moisten the final corner with some water to secure. Arrange on a baking paper-lined tray, seam-side down, and continue with the rest of the wrappers and pasta mixture.
  • Heat oil in a large saucepan or deep frying pan over medium-high heat until it reaches 3cm up the side of the pan. Shallow-fry spring rolls in batches for 1 minute 30 seconds to 2 minutes until golden and crisp. Drain on paper towel and serve warm with dipping sauce.
