Creamy macaroni with cheesy garlic prawns and crispy sourdough croutons.
Ingredients:
  • 200g dried macaroni
  • 100g butter
  • 40g (1/4 cup) plain flour
  • 625ml (2 1/2 cups) milk
  • 0.63 gm paprika
  • Pinch of cayenne pepper
  • 80g (1 cup) coarsely grated vintage cheddar
  • 2 slices day-old sourdough bread, torn
  • 9.20 gm extra virgin olive oil
  • 500g peeled, deveined green prawns
  • 1 garlic clove, thinly sliced
  • 2 green shallots, white part only, finely chopped
  • Baby rocket, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. Boil pasta until al dente, then transfer to a large bowl.
  • Melt 60g butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes until bubbling. Remove from heat, gradually whisk in milk until smooth. Bring back to medium heat, boil for 1-2 minutes until thickened. Remove from heat, season with salt, add mustard, paprika, cayenne pepper. Stir in cheddar until melted and smooth. Combine sauce with pasta.
  • - Divide the pasta evenly into four 375ml (1 1/2 cup) ovenproof dishes. - In a large non-stick frying pan over medium-high heat, melt the remaining 40g butter. - Add the bread to the pan and cook, stirring frequently, until golden brown, about 3-4 minutes. - Sprinkle the toasted bread crumbs over the pasta mixture. - Bake until golden, approximately 15-20 minutes.
  • Afterwards, gently wipe the frying pan with a paper towel. Heat the oil in the same pan over medium heat. Add the prawns, garlic, and shallot, stirring often, and cook for 4-5 minutes until the prawns are fully cooked.
  • Take the pasta dishes out of the oven, evenly distribute the prawn mixture among them, and sprinkle with fresh rocket leaves.
