Mac 'n' cheese zucchini slice recipe

Cheesy zucchini mac 'n' cheese - the ultimate kid-friendly lunch or dinner!
Ingredients:
  • 250.00 ml dried macaroni pasta
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tsp fresh thyme leaves
  • 125g middle bacon rashers, trimmed, chopped
  • 2 zucchini, coarsely grated
  • 200g orange sweet potato, unpeeled, coarsely grated
  • 49.50 gm self-raising flour
  • 4 eggs, lightly beaten
  • 125.00 ml grated light tasty cheese
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm square cake pan that's 6cm deep and line the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • Prepare the pasta according to the package instructions until tender. Then, drain the pasta, refresh it under cold water, and drain well.
  • Heat oil in a medium frying pan over medium-high heat. Sauté onion, garlic, thyme, and bacon for 5 minutes until onions soften. Add zucchini and sweet potato, cook for another 5 minutes until sweet potato is soft. Transfer to a large bowl.
  • Combine pasta, flour, eggs, and half the cheese with the vegetable mixture. Season with salt and pepper, then stir well. Transfer the mixture into the prepared pan. Sprinkle the remaining cheese on top. Bake for 30 to 35 minutes until golden and firm. Allow to cool in the pan before serving.
