Broccoli mac and cheese cups - a tasty twist on a classic favorite!
Ingredients:
  • 3 tablespoons butter or margarine
  • 1/2 cup Progresso™ plain or Italian style panko crispy bread crumbs
  • 4 oz uncooked elbow macaroni
  • 1 package (12 oz) frozen broccoli and cheese
  • 1 cup shredded sharp Cheddar cheese (4 oz)
Instructions:
  • Preheat the oven to 375°F. Line 12 regular-size muffin cups with foil baking cups. In a small microwave-safe bowl, melt 1 tablespoon of butter in the microwave on High for 15 to 30 seconds. Mix in bread crumbs and set aside.
  • Prepare the macaroni following the package instructions, then drain.
  • Melt the 2 remaining tablespoons of butter in a 4-quart saucepan over low heat. Stir in flour and salt and cook for 1 minute, whisking continuously. Gradually pour in the milk while stirring constantly. Cook and stir for 1 to 2 minutes until the mixture thickens and becomes smooth. Add the frozen broccoli and Cheddar cheese, cover, and cook for 8 to 10 minutes, stirring occasionally, until heated through. Remove from heat and mix in the macaroni until well combined.
  • Divide 1/4 cup of macaroni evenly into each cup and sprinkle each with a teaspoon of the bread crumb mixture.
  • Bake for 20 to 25 minutes until hot and the topping turns golden brown. Let it rest for 5 minutes before removing it from the pan.
