Bacon-Broccoli Mac and Cheese

Elevate your mac and cheese with steamed broccoli, crispy bacon, and a blend of Gouda and cheddar cheeses.
Ingredients:
  • 1 box (1 lb) elbow macaroni (about 6 cups)
  • 1 bag (12 oz) frozen broccoli cuts
  • 8 slices bacon
  • 1/2 cup sliced shallots
  • 6 tablespoons Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 cups milk
  • 12 oz white Cheddar cheese, shredded (3 cups)
  • 8 oz Gouda cheese, shredded (2 cups)
  • 20 round buttery crackers, coarsely crushed
Instructions:
  • Preheat your oven to 350°F and generously grease a 13x9-inch (3-quart) glass baking dish. Cook the macaroni according to package instructions for the minimum time, and also cook the broccoli following the package directions.
  • In a 4-quart Dutch oven, crisp up the bacon, then drain it on paper towels and crumble it, setting it aside. Keep 2 tablespoons of the bacon drippings. Cook the shallots in the reserved drippings until tender over medium heat. Stir in the flour, salt, and pepper to make a smooth and bubbly mixture. Gradually pour in the milk, stirring constantly until it boils and thickens.
  • Take the pot off the heat. Mix in 2 cups of Cheddar cheese and Gouda cheese until melted. Stir in cooked macaroni, broccoli, and crumbled bacon. Transfer the mixture into a baking dish and top with crushed crackers and the remaining 1 cup of Cheddar cheese.
  • Bake uncovered for 15 minutes, or until bubbly and cheese has melted to perfection.
