Tasty low-carb broccoli rice cooked in bacon grease and topped with crispy bacon crumbles.
Ingredients:
  • 4 slices bacon
  • 0.25 cup chopped onion
  • 1 (10 ounce) bag frozen broccoli rice
  • 3 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons green onion, chopped (green part only)
Instructions:
  • In a large skillet over medium-high heat, crisp up the bacon, turning occasionally, until perfectly browned, which should take around 10 minutes. Once done, transfer the bacon to a paper towel-lined plate, reserving 2 tablespoons of bacon grease in the skillet. Allow the bacon to cool slightly before crumbling it.
  • In a skillet over medium-high heat, sauté onions until soft and translucent for 3 to 4 minutes. Add broccoli rice and cook until tender for about 5 minutes, stirring often. Mix in beaten eggs and stir until fully combined. Cook until eggs are scrambled into the broccoli rice. Remove from heat and stir in soy sauce.
  • Sprinkle in crispy bacon crumbles right before serving and gently mix together. Garnish with fresh green onions.
