Bacon-Fried Breakfast Potatoes

Deliciously crispy breakfast potatoes fried in bacon grease, topped with crumbled bacon and tangy ranch dressing for a burst of flavor.
Ingredients:
  • 4 large russet potatoes, peeled
  • 4 slices thick-sliced bacon
  • 2 tablespoons Cajun seasoning blend (such as Tony Chachere's®), or to taste
  • 1 tablespoon garlic powder, or to taste
  • 1 cup buttermilk ranch dressing, or to taste
Instructions:
  • Cut the potatoes in half lengthwise and slice them into 1/8-inch half moons. Soak the slices in a bowl of ice water to keep them fresh while you prepare the bacon.
  • Fry bacon in a cast iron skillet on medium-low heat, turning occasionally, until perfectly browned, for approximately 10 minutes. Place the bacon on paper towels to drain and crumble once cooled. Keep the flavorful bacon grease in the skillet for later use.
  • After draining potatoes, gently pat them dry with a paper towel. Sprinkle with a flavorful blend of Cajun seasoning and garlic powder, then toss well to ensure every potato is perfectly coated.
  • Cook potatoes in bacon grease over medium-low heat, stirring occasionally, until browned and crispy with tender insides, 30-35 minutes. Cover as needed to accelerate cooking.
  • Drizzle ranch dressing over removed potatoes and top with bacon crumbles before serving.
