Ingredients:
  • 2 slices bacon
  • 2 tablespoons butter
  • 1 tablespoon diced onion
  • 4 potatoes, peeled and sliced
  • 2 eggs
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Fry bacon in a spacious skillet over medium-high heat until perfectly crispy. Place on a paper towel-lined plate, crumble, and retain the flavorful grease in the pan.
  • In a skillet, warm up the bacon grease over medium heat, then mix in butter. Stir in the onion and potatoes, cover, and cook until the potatoes turn golden brown, stirring occasionally.
  • Gently crack eggs over the potatoes and stir to combine. Sprinkle with salt, pepper, Cheddar, and bacon. Cook until eggs are firm and cheese is melted.
