Air fryer cheese latkes recipe

Cheesy fried potato cakes (latkes) symbolize the miracle of oil in Jewish holiday Hanukkah. Our version is air-fried with lightly sprayed oil. Par-boiling potatoes creates a sticky starch that binds without egg or flour. Wet hands to handle the sticky mixture.
Ingredients:
  • 800g potato
  • 125g piece mozzarella
  • 1/2 small brown onion, very finely chopped
  • 40g (1/2 cup) grated cheddar cheese
Instructions:
  • Peel potatoes and halve them. Place in a saucepan, cover with cold water, and bring to a boil with the lid on. Remove the lid and cook for 5 minutes. Drain and let cool on a board before handling.
  • Cut the mozzarella into 3.5cm-square pieces that are about 1cm thick. Grate the potato coarsely and spread it in a large wide bowl. Sprinkle with the onion and cheddar cheese, then season. Mix everything together using a spatula and your hands until well combined.
  • Spoon the mixture into a ¼ cup (60ml) measuring cup until half full. Place a piece of mozzarella in the center, then top with more mixture, pressing down firmly. Invert onto a cutting board. Repeat with the remaining mixture and mozzarella to create a total of 12 portions.
  • Preheat the air fryer to 180C. Gently press 4 latkes to form 8cm rounds. Spray the tops with oil, then flip and spray the other side. Arrange in the air fryer and cook for 6 minutes on each side until golden and crispy.
  • Continue cooking the remaining latkes in batches until golden brown and crispy. Season with salt and then serve them.
