Upgrade classic meatloaf with Italian flair by stuffing mini loaves with mozzarella and pepperoni, then air frying for a delicious twist!
Ingredients:
  • 0.33333334326744 cup milk
  • 2 tablespoons purchased basil pesto
  • 1 egg, lightly beaten
  • 1 clove garlic, minced
  • 0.25 teaspoon ground black pepper
  • 1 pound 90% lean ground beef
  • 0.33333334326744 cup Italian-seasoned panko bread crumbs
  • 8 slices pepperoni
  • 2 ounces small fresh mozzarella balls (such as BelGioioso®)
  • 0.5 cup marinara sauce, warmed
  • 1 tablespoon chopped fresh basil, or to taste
Instructions:
  • In a medium bowl, mingle milk, pesto, egg, garlic, and pepper. Gently mix in ground beef and bread crumbs, being mindful not to overwork the mixture.
  • Shape the meat mixture into 4 portions and create a well in each, leaving a 1/2-inch border. Add 2 slices of pepperoni to each well, overlapping them. Place 1/4 of the mozzarella balls on top of each portion. Enclose the filling by pressing the meat mixture around it and shape each into an oblong loaf. Cook the loaves in batches in the air fryer basket.
  • Air fry at 370°F (190°C) until the thickest part of the meatloaf reaches 165°F (75°C) on an instant-read thermometer, approximately 15 minutes. Top with warm marinara sauce and fresh basil before serving.
