Air fryer four cheese bacon mac and cheese - the ultimate comfort food.
Ingredients:
  • 2.5 cups elbow macaroni
  • 2 tablespoons bacon grease
  • 1 clove garlic, minced
  • 1 tablespoon flour
  • 1.5 cups milk
  • 1 tablespoon crumbled cooked bacon
  • 1 teaspoon dried Italian herbs
  • 0.25 cup grated sharp Cheddar cheese
  • 0.25 cup freshly grated Parmesan cheese
  • 0.25 grated Colby-Monterey Jack cheese
  • 0.25 cup ricotta cheese
  • salt and freshly ground black pepper to taste
  • 2 tablespoons Italian-seasoned bread crumbs
  • olive oil cooking spray
Instructions:
  • 1. Boil a large pot of lightly salted water. Add elbow macaroni and cook until al dente, about 6 minutes. Drain well.
  • In a small cast iron skillet, melt bacon grease over medium heat. Add garlic and cook until fragrant, about 1 minute. Stir in flour until golden brown to make a roux. Gradually whisk in milk and simmer until thickened, about 5 minutes.
  • Combine bacon and fragrant Italian herbs with a blend of creamy Cheddar, salty Parmesan, rich Colby-Monterey Jack, and smooth ricotta cheeses. Season generously with salt and pepper, stirring until the cheeses melt beautifully, approximately 3 minutes.
  • Preheat the air fryer to 390°F (195°C).
  • Gently mix the pasta into the velvety cheese sauce, generously sprinkle with bread crumbs, give a light drizzle of olive oil, and gently press down to ensure a crispy topping.
  • Air-fry until the top turns golden brown and the cheese starts bubbling around the skillet edges, approximately 15 minutes.
