Crispy Ranch Mac and Cheese Balls in the Air Fryer

Air-fried ranch mac and cheese balls: crispy on the outside, gooey on the inside.
Ingredients:
  • 1 (7.25 ounce) package macaroni and cheese dinner mix
  • 0.75 cup milk, divided
  • 0.25 cup margarine, cut into pieces
  • 0.5 cup shredded sharp Cheddar cheese
  • 2 cups cheese-flavored crackers (such as Cheez-It®)
  • 1 (1 ounce) envelope ranch dressing mix
  • nonstick cooking spray
Instructions:
  • 1. Boil a pot of salted water. Cook macaroni until tender, stirring occasionally, about 7 to 8 minutes. Drain macaroni without rinsing, then return to the pot. Stir in 1/4 cup of milk, margarine, and cheese sauce packet until fully combined.
  • Stir in the Cheddar cheese and remaining 1/2 cup of milk until the cheese is melted. Transfer the mac and cheese to a lidded bowl and refrigerate for 2 hours.
  • Prepare a baking sheet by lining it with parchment paper. Scoop out 1 1/2-inch balls of cold mac and cheese using an ice cream scoop. Place the balls on the prepared baking sheet and freeze for 1 hour.
  • Pulse cheese crackers in a food processor until fine crumbs form, then transfer to a bowl. Mix in ranch dressing mix and place beaten eggs in a separate bowl.
  • Preheat your air fryer to 360 degrees F (180 degrees C) and lightly coat the basket with cooking spray.
  • Coat each mac and cheese ball in egg and then the cracker mixture. Arrange the balls in the air fryer basket, ensuring they are not touching. If necessary, cook in batches. Give the tops a quick spray with cooking spray.
  • After preheating the air fryer, cook the balls for 10 minutes. Spray the tops with cooking spray, then cook for an additional 3 minutes. Transfer to a paper towel-lined plate and repeat with the remaining balls.
