Gluten-free Brazilian cheese bread bites cooked in an air fryer for a crispy exterior and soft, chewy center - a perfect savory snack or appetizer.
Ingredients:
  • 250ml (1 cup) milk
  • 125ml (1/2 cup) vegetable oil
  • 300g (2 cups) tapioca flour
  • 70g (1 cup) finely grated parmesan cheese
Instructions:
  • In a saucepan over medium heat, bring the milk and oil to a simmer for 2 minutes. Add the flour and mix well. Transfer to a stand mixer bowl and beat until smooth and slightly cooled, about 2 minutes.
  • Add the eggs one by one, mixing thoroughly after each addition. Incorporate the cheese until just mixed. Shape tablespoons of the batter into balls using damp hands.
  • Prepare the air fryer basket by lining it with baking paper and cutting it to fit. Arrange the balls 5cm apart on the prepared baking paper. Air fry at 180C for 15 minutes or until golden and puffed. Repeat with the rest of the balls. Serve and enjoy!
