Air-fried Brazilian cheese rolls made with manioc starch, Cheddar, and Parmesan cheeses for a crispy, gluten-free treat.
Ingredients:
  • 0.75 cup sweet manioc starch (polvilho doce) (such as Yoki®)
  • 0.75 cup sour manioc starch (polvilho azedo) (such as Yoki®)
  • 0.25 cup whole milk
  • 0.25 cup water
  • 0.25 cup olive oil
  • 2 eggs, lightly beaten
  • 0.75 cup shredded Cheddar cheese
  • 0.5 cup finely grated Parmigiano-Reggiano cheese
Instructions:
  • Preheat your air fryer to 325°F (165°C).
  • Combine sweet and sour manioc starches in a bowl until well mixed.
  • In a saucepan, bring milk, water, olive oil, and salt to a boil. Add starches, stir until liquid is absorbed, and the mixture becomes very dry. Remove from heat and cool slightly before handling.
  • Combine eggs with starch mixture in the saucepan until a smooth dough forms and pulls away from the sides. Mix in Cheddar cheese and Parmigiano Reggiano until well combined.
  • With gloved or lightly oiled hands, shape golfball-sized portions of dough into balls and place them on a plate. Line the air fryer basket with parchment paper and arrange the dough balls approximately 1 inch apart in batches.
  • Air fry the balls until they are crispy and golden brown on the outside, about 8 to 10 minutes. Repeat the process with the rest of the balls.
